This book equips its readers with fundamental concepts and a comprehensive understanding of nanozyme catalysis mechanisms and their application to food and biological analysis. Nowadays, nanozymes have become a new research hotspot, and more than 1200 kinds of nanozymes have been developed. This new research paradigm makes it easier to understand the catalytic behaviour of nanomaterials in biological systems, which is conducive to the promotion of nanomaterial-related applications. Guan Huanan is working as professor at Jiangsu University of Science and Technology, Zhenjiang, China. He received his MTech and PhD Degree in Bioengineering from Northeast Forestry University, Harbin, China, in 2008 and 2011 respectively.

Zhang Zhihong is a lecturer at the School of Grain Science, Jiangsu University of Science and Technology in Zhenjiang City, Jiangsu Province, China. She received her PhD Degree in Food Science and Engineering from Nanchang University in 2020.

Gong Dezhuang is working as lecturer at Bohai University, Jinzhou, China. He received his PhD Degree in Bioengineering from Northeast Agricultural University, Harbin, China, in 2023. Currently, Gong’s team is working on the development of photocatalysis, nanozyme activities, and food freshening.

Chen Yanyu is a master’s degree student at Harbin University of Commerce, studying under Professor Guan Huanan. She was admitted to Harbin University of Commerce in 2022 to pursue a master’s degree.

Han Bolin is working as lecturer at Harbin University of Commerce, Harbin, China, where he received his MTech Degree in 2019 and is currently pursuing a PhD in Food Science and Engineering.
